Lyle's is number 38th best restaurant in the world, and there are no table clothes, no chefs behind glass windows wielding tweezers, no white gloved waiters breathing over your shoulder. It's the most relaxed, best restaurant you'll ever eat at. It's a bright open space that gives you room to breathe unlike some Michelin restaurants. It's almost the antichrist to those places, the naughty sibling who you tell one thing to do and they do the other, but that's what makes it one of the best.
Why is it so special?
I love trying new things, and stingray was quite the gastronomic adventure. I have to admit, I Googled 'thornback ray' just to confirm my suspicions. Any hesitations were out the window, it was such a beautiful texture, meatier than bream or sea bass, but softer than cod. What Lyle's does so well, is keep the ingredients stripped back to let the main element say it's bit, and it was a sonnet to food.
