Max’s Morning Reviver is a hot sarnie which packs a festive punch with smoked turkey legs, a fried egg, turkey gravy mayo, Bloody Mary ketchupwith TABASCO® Sauce, shoestring fries and Baby Gem lettuce in home-made focaccia bread. Focaccia bread or an English muffin

60g leftover turkey

1 tbsp ketchup

A dash of TABASCO® Sauce

A dash of Worcestershire sauce

A squeeze of lemon juice

2 tbsp leftover gravy

1 tbsp mayonnaise

A handful of shredded Baby Gem lettuce

1 egg

A handful of shoestring fries or crisps

A big pinch of celery salt



  • First up, make the Bloody Mary ketchup and the turkey gravy mayo, as below

  • To make the Bloody Mary ketchup, combine the ketchup with a dash (or three!) of TABASCO® Sauce, Worcestershire sauce and the lemon juice

  • To create the turkey gravy mayo, mix the leftover gravy with the mayonnaise. Gravy mayo (of various kinds) is one of the signature sauces at my Sandwich Shop, and one of the best things ever!

  • Then, place the leftover turkey in a pan with a splash of water or – if you’re a real devil – add some more leftover gravy, and heat until piping hot

  • Fry an egg either sunny side up or flipped, depending on how you like it

  • Cut the bread in half and slather the top in the turkey gravy mayo, making sure to cover every corner

  • Cover the bottom of the bread with a generous pile of hot turkey

  • Then cover the meat with the Bloody Mary ketchup

  • Roughly tear the Baby Gem lettuce and place it top of the turkey and ketchup

  • Plonk the fried egg on top of the lettuce

  • Crush the fries or crisps in a bag, add a big pinch of celery salt, shake it up and whack them on the egg

  • Place the lid on top, give it a bit of a squish, and take a bite – boom!
