Irish potato bread or potato farls, traditionally served with breakfast but also great on there own warm served with just real butter. This simple bread recipe is a great way to us up any leftover mashed potatoes or boiled potatoes.
For this amount 8 slices I used:
350 grams leftover mashed potatoes
80 grams of plain flour
1 pinch of salt
(you can also add 1 tsp of butter if your mashed had none added)
Mix in a bowl until the dough is formed, then knead on a well floured surface. Divide the dough into 2.
Roll or press out the dough to form a flat circle about 1/4 inch thick, then cut into quarters.
Cook on a hot cast iron skillet pan for about 3mins each side until their nicely browned.
Serve straight away with butter or as part of a breakfast
